This banana porridge with goji berries and raisins with a side of beetroot and spinach omelette is so delicious – your child will love it and so will you! Plus it only takes less than 20 minutes to make! This is suitable for a child over the age of 1.

What are the nutritional benefits of goji berries?


I first tried goji berries, when I worked in China back in 2017 – it’s a delightful addition to herbal tea as I often saw my colleagues doing, Goji berries can provide important benefits for your child’s health, namely in boosting their immune system. Goji berries are usually added to soups or tea as well as being made into juices and tinctures. What’s great is that it can help your child focus better, improve their eyesight, as well as strengthening vital organs such as the kidney and liver.

Ingredients

  • Porridge:
  • Spinach Beetroot Omelette:
    • 1/4 Beetroot
    • Handful of Spinach
    • 2 Eggs
    • 2 tbsp Olive oil

Instructions

  1. Pour desired quantity of milk into a saucepan along with desired amount of porridge.

  1. Wash a handful of spinach and beetroot and add to the blender with 2 eggs. Blend till well combined.

  1. In a frying pan, heat up the olive oil and once hot add in the omelette mixture. Flip over once. The colour should change from red to green.

  1. Cut up the omelette for easy eating and serve alongside the porridge.
  1. Vegetable Preparation: Soften dried black fungus in boiling water for 5-10 minutes. Once softened, cut to desired size. Slice cucumber and carrots and set aside.
  1. Cook ingredients and set aside: Boil carrot slices for 2 minutes until softened, then set aside. Whisk the eggs and scramble in a pan until fully cooked. Remove and set aside. Fry the marinated meat until well done, then set aside.
  1. Stir-Frying: In the same pan, fry the chopped garlic, then add carrot and black fungus slices for a brief stir-fry. Add cucumber and continue stir-frying.
  1. Final Touch: Add the cooked eggs and meat to the pan. Season with a pinch of salt, a dash of soy sauce, and oyster sauce. For thickness, add a small amount of cornstarch slurry. Optionally, sprinkle hot chili flakes for extra heat.
  1. Serve: This dish goes wonderfully with rice (I recommend jasmine rice).

  1. Can I use any type of milk for the porridge?
    • You can use any type of milk for this – I like to use coconut milk as an alternative. You don’t even need to use milk at all, water is just as fine but won’t have that creamy consistency.
  2. Are there any alternatives to goji berries and raisins?
    • Feel free to add any fruit of your liking! Blueberries, banana, strawberries, dates and more will be a great addition to the porridge.
  3. My child is picky about vegetables. Will they notice the spinach and beetroot in the omelette?
    • Not at all, if your child at all loves eating eggs then they’ll love this veggie omelette! The spinach and beetroot is not even greatly detectable, but I’d advice to add salt to take the flavour up a notch!
  4. Is this breakfast suitable for adults too?
    • Absolutely! I make this for myself too!
