Nigerian breakfast with toast, baked beans, avocado, fried eggs and fried plantain

What you eat for breakfast, if at all, is going to determine how you feel for the rest of the day. When I have breakfast, I like it to be hearty and incorporate majority of the food groups like protein and fibre. Studies show that today, we’re not eating enough fibre. A lot of processed foods lack fibre because this component prevents the food from lasting longer. So industries remove the fibre, in order to increase its shelf life. Fibre is important and helps promote a healthy gut and keep your digestive system functioning well. Examples of fibre rich foods include beans, fruits, nuts, wholewheat bread and avocado. So this Nigerian Breakfast with Plantain certainly has a lot of fibre in it!

Ingredients

Sourdough Bread

Sourdough bread is a staple in our family, it’s so nutritiously dense and is gut friendly. It also has a low glycemic index which means that the carbohydrates are slowly absorbed in your body making the rise in blood sugar gradual as opposed to a rapid spike.

Baked Beans

Baked beans are rich in fibre, but also packed with iron, folate and vitamin B. This is all helps to give you a lovely glow and increase your energy levels.

Omelette

Eggs Eggs Eggs! We can’t get enough of eggs! Eggs, the protein superfood is a fantastic source of vitamin D and vitamin B. Eggs help to promote healthy brain function and eye function. Adding other ingredients such as tomato and onions will certainly power up your omelette.

Fried Plantain

The combination with sweet and savoury is so wondrous with plantain, yet it seems to just finish so quick! Plantain is eaten by many people around the world. Not only do African eat it but South Americans, Caribbeans and South East Asians do too. Nigerians love eating plantain, it’s a great side dish for rice dishes, to make dodo gizzard and to have it with breakfast like in this recipe.

Avocado

Did you know that avocado promotes a healthy uterus? Not only that but avocados are also rich in fibre and are classified as healthy fats.

Nigerian Breakfast with Plantain

A delightfully light Nigerian breakfast but very fillings with plantain, bread, baked beans and more.

Ingredients
  

  • ½ Plantain sliced
  • 2 Eggs
  • ½ Avocado sliced
  • 2 Slices of toast
  • 3 tbsp Baked Beans
  • 2 tbsp Olive Oil
  • 3 tbsp Lard
  • 1 tbsp salt

Instructions
 

  • Slice half a plantain and season with a pinch of salt (optional)
  • Heat a pan with lard on medium heat and add the plantain, checking the bottom side is brown before flipping over
  • Whip the eggs with salt and pepper and fry to your liking
  • Slice the avocado, warm the baked beans and toast the bread
  • Assemble on the plate and voila! Enjoy!

Notes

Lard is a much better alternative to seed oils such as vegetable and sunflower oil. Alternatively you can use olive oil or coconut oil.
