Ingredients
  

  • Porridge
  • Milk
  • 10 Goji Berries
  • 10 Raisins
  • 1/4 Beetroot
  • Handful of Spinach
  • 2 Eggs
  • 2 tbsp Olive oil

Instructions
 

  • Pour desired quantity of milk into a saucepan along with desired amount of porridge.
  • Add in the goji berries and raisins and cook till done. Set aside in a bowl to cool.
  • Wash a handful of spinach and beetroot and add to the blender with 2 eggs. Blend till well combined.
  • In a frying pan, heat up the olive oil and once hot add in the omelette mixture. Flip over once. The colour should change from red to green.
  • Cut up the omelette for easy eating and serve alongside the porridge.
