Nigerian Breakfast with Plantain
A delightfully light Nigerian breakfast but very fillings with plantain, bread, baked beans and more.

Ingredients

Plantain
sliced

Eggs
½
Avocado
sliced

Slices of toast

tbsp
Baked Beans

tbsp
Olive Oil
3
tbsp
Lard
1
tbsp
salt
Instructions
Slice half a plantain and season with a pinch of salt (optional)
Heat a pan with lard on medium heat and add the plantain, checking the bottom side is brown before flipping over
Whip the eggs with salt and pepper and fry to your liking
Slice the avocado, warm the baked beans and toast the bread
Assemble on the plate and voila! Enjoy!
Notes
Lard is a much better alternative to seed oils such as vegetable and sunflower oil. Alternatively you can use olive oil or coconut oil.
