Nigerian Breakfast with Plantain

A delightfully light Nigerian breakfast but very fillings with plantain, bread, baked beans and more.

Ingredients
  

  • ½ Plantain sliced
  • 2 Eggs
  • ½ Avocado sliced
  • 2 Slices of toast
  • 3 tbsp Baked Beans
  • 2 tbsp Olive Oil
  • 3 tbsp Lard
  • 1 tbsp salt

Instructions
 

  • Slice half a plantain and season with a pinch of salt (optional)
  • Heat a pan with lard on medium heat and add the plantain, checking the bottom side is brown before flipping over
  • Whip the eggs with salt and pepper and fry to your liking
  • Slice the avocado, warm the baked beans and toast the bread
  • Assemble on the plate and voila! Enjoy!

Notes

Lard is a much better alternative to seed oils such as vegetable and sunflower oil. Alternatively you can use olive oil or coconut oil.
