This is not your usual eggs stir-try, but it’s so delicious you’ll be wondering why you’d never know about this dish! I came across this popular Chinese dish, fried eggs with Cucumber, Carrots, Black Fungus and Beef whilst searching for other ways to eat my eggs. At first when I came across this dish, I was skeptical but once I tried it, with a bit of my own remix, I found myself making it all the time! It’s goes so beautifully with rice (particularly jasmine rice) and it’s so colorful and healthy it’s a great dish for the whole family. Yes even your little one(s) will love this dish.
Eggs
I love eggs, whether it’s fried, boiled, scrambled, sunny side up – you name it, I’m all here for it! Eggs are really nutritious and go with so many dishes. It’s known for its high-quality proteins, vitamins and minerals. Vitamins include vitamin B complex, vitamin D and minerals such as selenium and iodine. It’s no wonder why bodybuilders or individuals looking to get really fit eat A LOT of eggs (sometimes even raw!). This is because eggs helps to support muscle and tissue repair, growth, and overall health. So with this knowledge, this is a great dish you have to try!
Black Fungus
I didn’t know about black fungus until my mother-in-law incorporated in one of her Nigerian soups (it was so delicious!). Interestingly I found out later than black fungus (aka wood-ear mushrooms) is popularly eaten in Asian countries, including China. Black fungus is not only low in calories but is a rich fiber, iron, and may help to lower blood cholesterol and improve blood circulation.
Meat
In this recipe, I chose to use beef although I normally use pork (which I prefer for the texture and flavour). One thing to note is that when choosing beef, make sure to avoid certain steak cuts like sirloin, as it will be too chewy. Best cuts are loin as they are most suitable for stir frying.
Ingredients
- 2 eggs
- 1 carrot, sliced
- ⅓ cucumber, sliced
- Beef or pork, sliced
- 3 garlic cloves, finely chopped
- 1 tbsp Shaoxing wine
- 1 tbsp soy sauce
- 1 tsp oil
- 1 tbsp oyster sauce
- 1 tsp salt
- ½ tbsp corn starch
- Optional: Hot chili flakes for extra heat
Instructions
- Meat Preparation: Slice the beef or pork and marinate with Shaoxing wine, soy sauce, oil, and corn starch. Mix well and set aside for 10 minutes.
- Vegetable Preparation: Soften dried black fungus in boiling water for 5-10 minutes. Once softened, cut to desired size. Slice cucumber and carrots and set aside.
- Cook ingredients and set aside: Boil carrot slices for 2 minutes until softened, then set aside. Whisk the eggs and scramble in a pan until fully cooked. Remove and set aside. Fry the marinated meat until well done, then set aside.
- Stir-Frying: In the same pan, fry the chopped garlic, then add carrot and black fungus slices for a brief stir-fry. Add cucumber and continue stir-frying.
- Final Touch: Add the cooked eggs and meat to the pan. Season with a pinch of salt, a dash of soy sauce, and oyster sauce. For thickness, add a small amount of cornstarch slurry. Optionally, sprinkle hot chili flakes for extra heat.
- Serve: This dish goes wonderfully with rice (I recommend jasmine rice).

- Can I use chicken instead of beef or pork? Yes, chicken is a good substitute for this recipe. Personally I prefer pork most of all because of the flavour and texture. However, I understand that not everyone eats pork.
- Is it necessary to use Shaoxing wine? Shaoxing wine helps to remove the gameness of the meat and add a unique flavour. However if you don’t have it on hand or wish not to use it, you can just omit it.
- Can I make this dish vegetarian? Absolutely! Just skip the meat part. I’ve made this dish many times without it and it’s just as delicious.
- How can I store leftovers? Store in an airtight container in the refrigerator for up to 2 days. Reheat before serving.
- Is this recipe kid-friendly? Yes, it’s nutritious and can be made less spicy for kids.
- Can I add other vegetables? Definitely! Other great additions include, tomatoes, broccoli and cabbage.

Fried Eggs with Cucumber, Carrots, Black Fungus and Beef
Ingredients
- 2 eggs
- 1 carrots sliced
- ⅓ cucumber sliced
- beef/pork sliced
- 3 garlic cloves finely chopped
- 1 tbsp shaoxing wine
- 1 tbsp soy sauce
- 1 tsp oil
- 1 tbsp oyster sauce
- 1 tsp salt
- ½ tbsp corn starch
Instructions
- Cut the pork/ beef into slices and marinate with shaoxing wine, soy sauce, oil and corn starch. Mix and set aside for 10 minutes.
- Vegetables preparation: Soften the dried black fungus by submerging in boiling water for 5-10 minutes. Once softened cut to desired size. Prepare the other vegetables (cucumber and carrots) by slicing them. Set aside.
- Add the carrot slices into a pot of boiling water and soften for 2 minutes. Remove and set aside.
- Whisk the eggs and scramble fry in a pan till done. Remove and set aside.
- Fry the meat until well done and set aside.
- Fry the garlic in a pan and then add the carrot and black fungus slices, stir-frying for a bit. Then add the cucumber and stir-fry.
- Add to the pan the cooked eggs and meat slices. Add a pinch of salt, a dash of soy sauce and oyster sauce. Then add a small amount of cornstarch slurry to thicken the dish.
- Optional: For a bit of a kick, add a sprinkle of hot chilli flakes.
- And voila! Best served with rice.
