I remember when I first tried Chinese pork rib soup. I was staying with my relatives in Guangzhou, Guangdong province. My cousins’ grandma made it after yet another scrumptious dinner. The soup was so refreshing and light and couldn’t help but have a second helping. It was full of nutritious vegetables as well as pulses that are known to be good for immunity boosting.
Of course when I got back to the UK I had to make it for myself and family from time to time, and so I learnt how to. It is such an easy soup to make, that you can cook it every week if you’d like. And especially as we’re transitioning into the colder months, this is a great soup to have – It’s very warming!
Apart from the vegetables and other main ingredients, all you need is Shaoxing wine and salt. It’s that simple but oozing with delicate flavour.
What is the benefit of adding shaoxing wine to pork?
Shaoxing wine is made out of fermented rice and is a staple in Chinese cooking. I add Shaoxing wine when parboiling the pork. The reason being, is that it removes any blood clots and the rawness of the meat. I always get this brand.
Notes when cooking pork rib soup with carrots
- Parboil pork to remove scum. So that your soup is void of any murkiness and froth, you’d definitely want to parboil the pork. After about 10 minutes of putting the pork on the fire with water, you’ll see that scum will arise to the top. Wash this away before setting back into the pot and your final pork rib soup will be free of any unwanted texture.
- The less seasoning the better. The only seasoning this dish requires is salt. That’s all. The blend of flavours from the pork and vegetables alone emits a nice umami taste.
- Feel free to add other vegetables. Can you add other vegetables to pork rib soup? Most certainly! This dish is also great with potatoes, daikon, radish and more! You name it and it’ll most likely be suitable to add.
- Jujube dates. Jujube dates are packed with a number of benefits. Not only are they sweet, they are high in antioxidants, fiber rich, and is great immunity booster. I always get this type, it’s dried and lasts a very long time in your pantry.
Ingredients
- 500 grams pork ribs cut between the bones
- 3 large carrots
- 2 corn on the cob
- 5-7 jujube dates
- 3 slices ginger
- 3 strings spring onions
- 1 tbsp Shaoxing wine
- 1 tbsp salt
Cooking instructions
- Prepare the vegetables by chopping the carrots into chunky bits and likewise with the corn on the cob.
- In a pot, add the pork ribs and cover with water. Add a few sliced spring onions and ginger, plus 1 tablespoon of Shaoxing wine. Put the pot on the stove and heat at medium temperature.
- Once scum has arisen, rinse the pork in a coriander and add back to the pot.
- Add all the vegetables and the dates and cover with water. Simmer for 45 minutes.
- After 45 minutes, add a tablespoon of salt and chopped spring onions (green part) and stir. Simmer for another 15 minutes.
- And voila, serve in a deep bowl! Enjoy this nutritious pork rib soup with carrots, corn and dates!
