A light, delicious soup loaded with pork ribs, carrots, corn and dates. Full of calcium it's especially wonderful for pregnant women, children and the elderly. Great to have after a meal or with.
Prepare the vegetables by chopping the carrots into chunky bits and likewise with the corn on the cob.
In a pot, add the pork ribs and cover with water. Add a few sliced spring onions and ginger, plus 1 tablespoon of Shaoxing wine. Put the pot on the stove and heat at medium temperature.
Once scum has arisen, rinse the pork in a coriander and add back to the pot.
Add all the vegetables and the dates and cover with water. Simmer for 45 minutes.
After 45 minutes, add a tablespoon of salt and chopped spring onions (green part). Simmer for another 15 minutes.
And voila! Enjoy!
