I really like sweet potato. I usually make fries out of it and season with salt and cayenne pepper. To me it seems that unlike the potato, sweet potatoes don’t have a lot of recipes attached to it however. Until! I came across a cheesy sweet potato bake recipe incorporating sweet potato and cheese and I had to try it! Oh my it was so delicious.
The recipe from Chinese social media simply mashed steamed sweet potato to make as a based and the topped with cheddar and mozzarella cheese. In this recipe, I went a little bit further. Always trying to increase my vegetable intake, I added spinach and tomatoes on top and it worked so beautifully, it’s how I always make it now. And of course with these type of meals, a side of salad is always welcomed.
Thankfully the family loved it when they tried it for the first time and I was recently able to serve it to friends – It was a hit! So I hope you’ll try it for yourself, it is such an easy recipe to make that you’ll probably have this on rotation every week. Let’s get on to make this easy cheesy sweet potato bake.
What baking dish I used
This recipe will work well for a medium sized oval baking dish as in the photos, however I definitely recommend making with a 30x20cm baking dish as it works best for serving and you can fit more in (just add a couple more sweet potatoes).
Ingredients
- 5 medium to large sized sweet potato (sliced)
- 500g/ 2 cups mozzarella cheese (grated)
- 500g/ 2 cups cheddar cheese (grated)
- 2 handfuls of spinach (chopped)
- 1 tomato (chopped)
- 1 tbsp butter
- 4 tbsp milk
- 1 tsp black pepper powder
Instructions to make Cheesy Sweet Potato Bake
- Preheat oven to 200℃. Peel and slice the sweet potato and boil in water until slightly soft. Drain out the water.
- Add the sweet potato in a 30cmx20cm baking dish. Add milk, butter and a bit of mozzarella cheese. Mash together with a fork.
- Wash the spinach and tomato and chop well. Combine with as much mozzarella and cheddar cheese as you fancy and cover the sweet potato. Sprinkle black pepper and cayenne pepper if you like.
- Put in the oven at 200℃ and bake for 15 minutes.
- Voila! Enjoy with a side of salad.

- What kind of milk is best for this recipe? I used whole milk for a creamier texture.
- Can I add more vegetables to this bake? Certainly. Feel free to add other vegetables like bell peppers, mushrooms, or broccoli.
- How do I ensure the sweet potatoes are done? Boil the sweet potatoes until they are slightly soft but not mushy. They should be easily pierced with a fork. Alternatively you can steam the sweet potatoes to retain the nutrients.
- How can I make this dish spicier? You can add more cayenne pepper or include some chopped jalapeños. I’m going to try that next time!
- How can I avoid a watery texture in the bake? Steaming the sweet potatoes will be best but if you boil them, just make sure that you do not over boil and that the sweet potatoes are well-drained.
