Plantain Egg and Baked Beans Sandwich

Fried Plantain

I grew up eating fried plantain all the time. I remember ‘helping’ my mum eat the raw plantain (I know) when she wasn’t looking. It was so nice when seasoned with salt! My mum would often make it with fried egg for us and feed me and my siblings it with a bowl of tasty porridge. It’s such a great combination of savoury and sweet that I still make it for myself and my family to this day!

In Nigerian cuisine, fried plantain is also known as “dodo” in Nigerian cuisine, and is a beloved side dish in Nigeria. It is usually paired with rice but can be eaten alongside yam dishes, abuja bread and more. It is a simple yet flavorful preparation of ripe plantains that have been sliced and fried until they are golden and caramelized. The history of fried plantain in Nigerian cuisine is deeply rooted in both the culture and the agricultural abundance of the region. What’s more is that plantain goes well with a number of things and can also be boiled (great with beans) and can be turned into chips as well.

Why Lard?

Lard is made out of 100% animal fat, usually from pork that has be separated from the meat flesh. For a while now, we have used this when deep frying ingredients instead of vegetables oils. Sandwich grilling machine

Now this is optional, but it really adds a nice touch and texture to your toast. I have an old George Foreman that I’ve had for years and use it all the time – It’s such a good buy. On Amazon you can get this one or a cheaper alternative, which I’m sure is just as good here or here.

Ingredients

  1. 1 ripe plantain
  2. 2 eggs
  3. 1/2 teaspoon of salt (optional)
  4. 2 tablespoons of lard
  5. A drizzle of olive oil
  6. 1 can of baked beans
  7. Butter for toasting
  8. Slices of bread

Cooking instructions

1. Prepare the Ingredients
Begin by cutting your ripe plantain into your desired style. If you like, you can sprinkle it with half a teaspoon of salt for an extra burst of flavor. In a bowl, break the eggs, add a pinch of salt, and whisk them until they’re well combined. Set ingredients aside.

2. Fry the Plantains
Heat up a frying pan over medium-high heat and add 2 tablespoons of lard. Let it melt and get hot. Once the oil is hot, carefully add your plantain slices to the pan. Fry them for about 5 minutes, turning them over as needed until they become golden brown. Remove from the pan and set aside.

3. Cook the Eggs
In a separate frying pan, add a drizzle of olive oil and let it heat up. Pour the whisked eggs into the pan and fry them till you’re desired. This should only take about a couple minutes

4. Warm the Baked Beans
In a small saucepan, warm up the canned baked beans over low heat until they are hot and ready to be used in your sandwich.

5. Assemble the Sandwich
Lightly toast your bread slices. Once toasted, spread a bit of butter on them. Now it’s time to assemble the sandwich! Place the fried egg onto one slice of the buttered toast, followed by your fried plantain slices. Finish it off with a spoonful of baked beans and top it with the other slice of toast.

6. Grill the Sandwich
If you have a sandwich grill machine, place your assembled sandwich inside and grill it for about 2-3 minutes or until the bread is nicely toasted, and the ingredients are heated through.

7. Serve and Enjoy!
You can cut it in half diagonally or horizontally – however you like. And there you have it – a scrumptious Fried Plantain, Eggs, and Baked Beans Sandwich that’s perfect for breakfast, brunch, or any time you’re craving a hearty and satisfying meal. It’s such a quick dish to make, and will leave you wanting more!

Ingredients
  

  • 1 ripe plantain (sliced)
  • 2 eggs
  • 4 sliced bread
  • 1 tsp salt
  • 2 tbsp lard
  • 1 tbsp olive oil
  • 3 tbsp baked beans

Instructions
 

  • To prepare the ingredients, start by cutting your plantain to you desired style and add 1/2 teaspoon of salt (optional). Break your eggs in a bowl, add a pinch of salt and whisk well.
  • In a frying pan add 2 tbsp of lard and the stove to medium high heat. Once the oil has heated add in your plantain and fry for about 5 minutes, making sure to turn over once browned.
  • In a separate frying pan add a drizzle of olive oil and once hot fry the eggs.
  • Warm the baked beans over the stove till hot.
  • Lightly toast your bread, butter it and then assemble the ingredients:
  • First place the fried egg on to one slice of bread, then add your plantain pieces and lastly a spoonful of baked beans. Cover with the other sliced bread.
  • In a sandwich grill machine, place the assembled toast and grill for about 2-3 minutes.
  • And voila! Enjoy!
