Method
- To prepare the ingredients, start by cutting your plantain to you desired style and add 1/2 teaspoon of salt (optional). Break your eggs in a bowl, add a pinch of salt and whisk well.
- In a frying pan add 2 tbsp of lard and the stove to medium high heat. Once the oil has heated add in your plantain and fry for about 5 minutes, making sure to turn over once browned.
- In a separate frying pan add a drizzle of olive oil and once hot fry the eggs.
- Warm the baked beans over the stove till hot.
- Lightly toast your bread, butter it and then assemble the ingredients:
- First place the fried egg on to one slice of bread, then add your plantain pieces and lastly a spoonful of baked beans. Cover with the other sliced bread.
- In a sandwich grill machine, place the assembled toast and grill for about 2-3 minutes.
- And voila! Enjoy!
