Ingredients
  

  • 1 ripe plantain (sliced)
  • 2 eggs
  • 4 sliced bread
  • 1 tsp salt
  • 2 tbsp lard
  • 1 tbsp olive oil
  • 3 tbsp baked beans

Method
 

  1. To prepare the ingredients, start by cutting your plantain to you desired style and add 1/2 teaspoon of salt (optional). Break your eggs in a bowl, add a pinch of salt and whisk well.
  2. In a frying pan add 2 tbsp of lard and the stove to medium high heat. Once the oil has heated add in your plantain and fry for about 5 minutes, making sure to turn over once browned.
  3. In a separate frying pan add a drizzle of olive oil and once hot fry the eggs.
  4. Warm the baked beans over the stove till hot.
  5. Lightly toast your bread, butter it and then assemble the ingredients:
  6. First place the fried egg on to one slice of bread, then add your plantain pieces and lastly a spoonful of baked beans. Cover with the other sliced bread.
  7. In a sandwich grill machine, place the assembled toast and grill for about 2-3 minutes.
  8. And voila! Enjoy!
